This famous cut of meat was created as a dish in 1822 by chef Montmireil, for the Vicomte François-René de Châteaubriand, at that time Ambassador of France in England. Later, in the 1890s chef restaurateur Auguste Escoffier named the specific center cut of the tenderloin "le Châteaubriand". By the 1950s in the United States, Chateaubriand (without the French "â") became a treat for upscale VIPs and high rollers in Las Vegas, eventually becoming a staple of the local supper clubs referred to as gourmet rooms that were found on and off the Vegas strip. 2lb.+-
