If you have ever traveled the narrow winding back roads between Montepulciano and Montalcino, you have probably gone by the small farms that make this delicacy. Coarsely chopped and stuffed by hand, the chubs all display individual “shapes” although they are cylindrical, some curve, some are straight, and yet some spiral. The thing they have in common is the peppercorn and the wine used in their making. Great with rustic bread and a Tuscan red. You can order a chub (approximately 9oz) or a sliced ready-to-eat 4oz antipasto plate.
