When our Italian ancestors arrived in America, those coming from Apulia, Basilicata, and the Napoli regions brought with them Scamorza. A pulled curd cheese we make by hand, in the shape of two balls with a “neck” from which we hang it to mature. It is left in its whey for several hours before it is hung to dry. We have it in its two traditional versions, natural and smoked. In addition, by special order, we can make an “Ubriaco” (drunk) version where we infuse the cheese in red wine. The Ubriaco takes two weeks to fully mature, and it is available as pre-order. Average weight 1 pound.
