Canestra means “basket” in Italian. A canestrato is a cheese whose curd has been pressed inside a basket to spill the whey. It is an old and traditional method, canestras being the first cheese molds known to man. I have seen canestras in Sardinia made of papyrus, being used since Roman times, about 2000 years old, and still being used. Our canestrato cheeses are made by hand in plastic baskets, to comply with health department regulations, and come in a variety of flavors. Aged for a minimum of two weeks, we are currently making a version with Porcini mushrooms and black truffles, and one with Sundried tomato and paprika. They are approximately 1lb.
