Beemster, where the cheese is made, is a polder 13 feet below sea level of a former lake drained by windmills in northern Netherlands. The community enjoys the reputation of producing some of the richest, creamiest milk in Holland product of cows pasturing on grass grown on sea clay. Beemster draws its unforgettable flavor from the fact that part of the production process (the stirring of the curd) is done by hand and that the cheese is ripened in changing conditions.
