Chef Lippe - Gruyère AOP

Gruyère AOP Swiss cheese is a hard, cow's milk cheese that slowly matures in the cave-like atmosphere of cellars in Switzerland. Each wheel is carefully turned, lightly brined, and brushed. It is hard with a firm and dense yet pliable texture and slight graininess. Its density makes it stronger and less stringy than Emmental when heated, so it is better for grating, grilling, and using in soups. It has a buttery and toasty flavor that features a wonderful complexity of flavors, including candied walnuts and dried fruit, with earthy and nutty notes and a rich, creamy aroma. Gruyère originated in the cantons of Fribourg, Vaud, Neuchâtel, Jura, and Berne in Switzerland. It is named after the town of Gruyères in Fribourg. In 2001, Gruyère gained the appellation d'origine contrôlée, which became the appellation d'origine protégée as of 2013. One of the staples of the holy trinity of cheeses used in preparing Fondue.
