Recipe: Baked Brie with caramelized onions and bacon.
I love caramelized onions, and they marry well with Brie. Baked Brie is a classic. It is served with toast or bread. It is usually topped with jellies, fruits and nuts or a combination of these. I made this one with caramelized onions left over from an apple onion hot pepper chutney. Then as everyone knows, bacon makes everything better, so I sprinkled it with bacon pieces. Here is my recipe.
Ingredients for the caramelized onions:
3 large onions, chopped
2 tablespoons butter
1 tablespoon of olive oil
Preparation of onions:
Mix butter and oil in a saucepan. Over low heat and stirring regularly sweat the onions until translucent but still hard. Add a pinch of salt, a pinch of pepper and a teaspoon of chutney, it can be store bought, mango, tamarind, or any fruit you prefer. Mix well gently, cover the pan, and set aside for about an hour.
Preparation of bacon:
Line bacon in baking sheet over parchment paper, bake at 400 degrees Fahrenheit until crisp, let cool and crumble.
Preparation of baked Brie:
With the cheese still very cold, remove top carefully with a long thin blade. Make an aluminum foil “boat” around the cheese, as to give it support in the oven. Place top back on cheese and place on oven baking tray. Bake cheese at 350 degrees Fahrenheit for about thirty minutes, or until the inside is runny but the walls are firm.
Remove from oven, place on serving dish with toasts, crackers, or rustic bread, remove top, place caramelized onions to taste on cheese, and sprinkle bacon on top. Place top back as decoration.
